One Degree of Trotter

Here, we present a selection from the local branch of the Trotter Family Tree, with the date of each chef's tour of duty, and his or her current position.

Over the past 20 years, scores of young men and women have passed through the kitchen at Charlie Trotter's (816 W. Armitage Ave.; 773-248-6228) and spread out around the world. It's safe to say no restaurant in Chicago turns out more successful chefs. The reason is threefold: Trotter (see The Transformers) has an eye for talent; a stint in his kitchen is a golden ticket on a résumé; and his obsession with perfection rubs off on employees, who take it wherever they go.
