We first caught wind of Matthias Merges’ (Yusho) plan to open a 50-seat watering hole in Logan Square back in August; ever since, we’ve impatiently waited for its debut. Our maiden voyage on Friday evening (the bar’s second official night in business) produced some stellar candids from the packed house of curious cocktailers. By the looks of it, we weren’t the only ones eager for our first taste of Billy Sunday’s classic tipples (Daiquiris and Old Fashioneds) and original concoctions—many of which enlist homemade bitters and tonics.
