This BYO joint in Ukie Village doesn’t concern itself with what to eat when. “My brother is a huge Parks and Recreation fan,” says Rick Rodriguez. “I love burgers; he loves pancakes. We wanted to do the breakfast for dinner that Ron Swanson always talks about. That’s why he is our unofficial mascot.”
They did Ron proud. Morning or night, you can have a burger ($10.50) on French toast instead of a bun ($2 extra) or an eight-ounce rib-eye steak with eggs any style and home fries ($12). For two bucks, you can add scrambled eggs and chorizo to the house burger already loaded with Chihuahua cheese, smoky chipotle mayo, and crisp tortilla strips ($11, with home fries). The Mexican breakfast staple chilaquiles ($11) goes down just as easy at dinnertime. Thick tortilla chips soaked in housemade salsa are topped with Chihuahua cheese, avocado, and charred chicken and flanked by eggs cooked any way (try the soft-as-clouds scrambled).
