“In restaurant years, eight years is a lifetime,” says David Dworshak. That’s how long the Pensacola, Florida transplant spent at Carnivale in River North before he got the bug to move on. His new gig: Takito Kitchen in Wicker Park.
Despite the name, which seems to imply small tacos in a small restaurant, Dworshak has big ideas for the 80-seat space. Handmade sesame-flavored tortillas for pork belly, hibiscus-laced tortillas for seafood, and Middle Eastern–influenced lamb queso fundido folded into soft tacos—Dworshak is clearly on a mission to push global boundaries with artisanal products.
