Flaming chicken saganaki? Pita balloons? What in blazes is happening at the Langham Chicago, the new luxury hotel in the Mies-designed IBM Building?
Travelle, a contemporary Mediterranean restaurant with grand ambitions, is happening in mid-July. And with Tim Graham (Tru) helming the kitchen and David Rockwell (Nobu) designing the space, it’s bound to happen in a big way. Think floor-to-ceiling windows, white oak, and a showcase kitchen proffering light takes on Med classics, such as ahi tuna niçoise carpaccio.
“Staying true to the concept means a lot of fish on the menu,” says Graham. “But there are sheep and cows just over the next mountain.”
