Sepia’s elegant dining room fills up every night for a $95 four-course prix fixe menu. That’s no surprise, given the crack team running this place. Chef Andrew Zimmerman and chef de cuisine Kyle Cottle mix international influences with aplomb. Take their play on steak Oscar that calls for grilled short rib, fried morel mushrooms, smoked béarnaise, and crispy nori. Pastry chef Erin Kobler is among the city’s best, and wine director Alex Ring always finds precisely the right pour (pairings are $59). Start (or end) with a cocktail from head bartender Keith Meicher, like the Bowl of Fire, made with reposado tequila, vermouth, Benedictine, and a waft of smoke. Open for 17 years, Sepia just keeps humming.
