From its start in the early 2010s as an itinerant brewery with twin interests in experimental beers and social justice, Logan Square’s Bungalow by Middle Brow seems to gain new layers of complexity by the year. It’s a pizzeria. It’s a bread bakery. And most recently, Middle Brow is also a daytime café serving up creative pastries (like chocolate bostock finished with banana jam and a swoosh of torched marshmallow) and a low-intervention winery spotlighting Midwest-friendly grape varietals. It’s an ever-widening net, yet the thread of natural fermentation (in other words, forgoing commercial yeast for the wild stuff) brings it all together. 2840 W. Armitage Ave. middlebrowbeer.com
