For a foodie obsessed with quality, navigating Lincoln Park’s Green City Market—the best and biggest farmers’ market in Chicago, with 60 stands, open Wednesdays and Saturdays from 7 a.m. to 1 p.m.—can be a challenge. Nicole Pederson, the chef at Evanston’s acclaimed restaurant Found, shares six of her favorites.

Pederson’s Easy Farmers’ Market Meal
“In my fridge I always have boiled potatoes, so I’ll take those and make a nice little salad. Mint Creek Farm [also at the Green City Market] has nice, tender cuts of lamb, which you can just salt and pepper and it’s ready to go on the grill. Then I roast some beets, hard-boil some eggs, take some goat cheese, and put that on greens. My dressing is usually just red wine vinegar, mustard, fresh thyme, and olive oil, topped off with some Aleppo chili flakes.”
