Sophie Evanoff bought Vanille Patisserie from her former French Pastry School teacher Dimitri Fayard two years ago. Now that she’s spent that time maintaining the recipes and the brand created by the Fayards, she’s ready to put her own thumbprint on the sweets, primarily by opening the third and largest Vanille Patisserie (2108 N. Clark St., 773-868-4574) later this month or early November.
The new location will duplicate the others’ chocolates, candies, tarts, croissants, mousse cakes, and other items, as well as increasing the number of macaron flavors (now 20). Café seating for 22, an espresso bar, and a by-appointment-ony custom-cake design room debut with the Clark Street location.
Some things, however, will not appear. “I won’t do cupcakes. Or chocolate chip cookies!” Evanoff says. Guess we won’t bother asking for a chocolate chip cupcake.
