After years crafting Mexican food for King Rick Bayless, husband-wife duo Brian Enyart and Jennifer Jones are taking south-of-the-border fare into their own hands with Dos Urban Cantina (2829 W. Armitage Ave., Logan Square, 773-661-6452), opening early next month in the former Katakana Sushi space.
Partnering with the hospitality power-couple Michael and Erika Rotolo (of Joe's Stone Crab fame), Enyart and Jones will serve as owners and top chefs at Dos. The two met at Topolobampo after Enyart, then the restaurant's chef de cuisine, hired Jones as a pastry chef, and started dating after Enyart had left to work with Lettuce Entertain You.
As for what Enyart and Jones will actually do with their shiny new storefront, the couple didn't reveal…much of anything. Dos will hold 75 people in its dining room and another 30 in the front bar. It will open seven nights a week for dinner with plates ranging from $8 to $28. There have been no tastings yet, but Enyart and Jones are hard at work on their respective menus (dinner for him, dessert for her), which they promise will be wholly removed from their Bayless creations. "Jennifer and I have [a] combined 20-year career with Bayless," says Enyart. "Mexican food is deep in our souls."
In other words: If opening a Mexican-fusion restaurant in the shadow of Bayless sounds daunting (in a neighborhood known for the real stuff, no less), Enyart and Jones are asking for a little good faith.
